Simple Seaweed Wraps

Need an idea for a quick lunch or dinner that's still full of flavor and nutritious?

This recipe for simple seaweed wraps is a staple for us here at Aum Grown Living Foods. It's a great meal because no matter what veggies you throw together, the wraps are always amazing and allow you to use up what's in the fridge! You can find the seaweed wraps and pickled ginger at your local Asian Supermarket or Whole Foods Market. The prep time is dependent on how many veggies you choose to incorporate, but for the sake of the recipe, the total time to wash veggies, cut, and wrap up is about fifteen minutes. You could also get creative and add a cooked element like fried tofu!

Let's talk ingredients!

- Yaki Sushi Nori Seaweed Wraps

- Avocado (or Hummus)

- Pickled Ginger

- Tamari (or Soy Sauce)

- Vegetables (Cucumbers, Bell Peppers, Carrots, Zucchini, Green Onion, etc.)

- Aum Grown Living Foods Green Pea, Rambo Radish, and Wasabi Mustard Microgreens

Wrap it up!

1. Wash and cut the veggies into thin strips (julienne) and also wash and cut open the avocado, if you choose.

2. Start wraps by smearing some hummus and/or scooping out some avocado and taking a fork to mash it onto one end of the seaweed wrap.

3. Layer veggie strips on top of the hummus or avocado and top with a couple pieces of pickled ginger.

4. Top with a heaping handful of Aum Grown Living Foods Green Pea, Rambo Radish, and Wasabi Microgreens.

5. Drizzle some tamari or soy sauce over the greens.

6. Roll it up! (These wraps can get pretty chunky so what I do is carefully roll it up a little, fold over one side so the veggies are tucked in, then roll it up the rest of the way)

And that's a wrap, Enjoy!
